Llancaiach Fawr

Indulging in Afternoon tea is as much about a dining experience as being served exquisite treats. Often that idyllic setting is closer to home than anticipated. This is true enough for Llancaiach Fawr, with modern facilities on the backdrop of a 16th century historic manor house in picturesque grounds, there are few places better to repose.  Catering Manager Kezz was equally enthused to take full advantage of the local venue’s beauty. However, a logistical problem was poised by the fact that numbers fluctuated unreliably so the shortly perishable fresh desserts were not practical. We have designed a unique set frozen afternoon tea box which is split into compartments altogether containing; 4 Scones,  4 mini Carrot cakes, 4 Mini Raspberry Muffins, 4 Mini Duo Mousse pots and 4 7cm Lemon Tarts (One of our Great Taste Winners in 2016). This fitted perfectly with Llancaiach’s needs, the boxes could be frozen for up to 3 months allowing for a guaranteed minimum stock level to be kept.  The boxes could then be used as and when needed whilst being confident they were of the usual Terry’s Patisserie standard.  Many have indulged in an afternoon tea at Llancaiach Fawr since.

The Vale Resort

Our bespoke solutions take a chefs imaginative design and allow it to become a wholly unique item on their menu. Dean Milburn, Executive chef at the Vale resort, enquired into a white & milk chocolate stacked dessert for his approaching casino nights. Interestingly Dean had the vision of the dessert being finished to aptly replicate a black and white tie event. Our team of skilled and dedicated pastry chefs allow the new product development process to be as seamless as possible. Within 2 weeks a first sample was delivered directly to the team of chefs at the Vale Resort. Chefs need to have a sharp eye of perfection, the taste met the high standards of production and our inventive take on how to achieve the desired appearance of a dinner jacket was credited. A request for a minor adjustment was made in asking that the bow tie was made more triangular. We sourced the equipment and slightly altered our method to make this possible. Our chocolate tuxedo’s as they are now listed, were fit for the Las Vegas themed nights encompassing both elegance and indulgence.

The Exchange

Afternoon Teas have vastly become the trending way to dine. Our set afternoon tea box can come frozen allowing for logistical ease whilst maintaining the quality one would expect from such an exquisite treat.  However, inevitably our standard box fit for four, consisting of a variety of miniature desserts in quadruplets, is not suitable to the needs of all our clientele. Keith Clash Head chef at The Exchange is gloriously passionate about what he serves and rightly so. Keith approached ourselves seeking bespoke elements which would fit into his already successful afternoon tea selection. Priding ourselves on offering flexibility and providing solutions our patisserie chefs seamlessly crafted a handful of quality tortes, tarts and sponges. These particular desserts can now be enjoyed as part of an afternoon tea experience in one of Cardiff's most resplendent and impressive venues. The process is constantly evolving as we continue to work with Keith and the team of chefs at The Exchange to consistently provide fresh and tasteful elements to maintain a refreshing and indulgent experience.
